Is it okay to use whole wheat flour instead of all purpose flour?
I am making some bread and the recipe calls for all purpose, but I do not have enough
Using all-purpose flour for bread is pretty sketchy anyway, because the gluten levels are low. When you make whole-wheat bread, you normally use at least 50% bread flour in order to get enough gluten.
If you have 50% AP flour in your loaves, they’ll be edible. If you use 100% whole wheat flour, you’ll end up with incredibly dense loaves that are very low.
